Fall Is Baking at Tulla: Four Handmade Specials Worth Waking Up For

There is a very particular smell that tells you fall has arrived at a bakery.

Butter browning at the edges of pastry. Apples softening in the oven. Warm pumpkin. Chocolate. A little spice in the air. Coffee being poured somewhere nearby.

This weekend at Tulla Patisserie & Cafe, our pastry case is leaning completely into the season with four handcrafted specials that feel exactly right for a late-September morning in Frisco:

Apple Galette
Pumpkin Cream Cheese Muffin
Apple Crumb Danish
Chocolate Cream Tarts

And, as always at Tulla, these aren’t pastries arriving frozen in a box and being warmed up for the display case.

Our bakery was built around the idea of a true neighborhood French-inspired patisserie — one where the bakers are actually baking, the dough is actually being made, and the ingredients going into our pastries matter.

Everything is made from scratch in our kitchen using fresh ingredients and the traditional French and American baking techniques that have shaped Tulla from the very beginning.

This weekend, you can taste that philosophy in every bite.

Apple Galette

There is something beautifully imperfect about a galette.

Unlike a perfectly molded tart, a French galette is meant to look handmade. The pastry folds naturally around the fruit, leaving the center exposed so the apples can soften, caramelize and become the star of the dessert.

Our Apple Galette begins with delicate, buttery pastry wrapped around apples and baked until the crust becomes crisp and deeply golden.

As it bakes, the apples soften and release their juices into the pastry beneath them, concentrating their natural sweetness while the exposed edges develop those wonderfully caramelized notes that make baked apples so irresistible.

The best bite gets a little of everything: tender apple, buttery pastry, crisp edge and that soft center where the fruit and crust meet.

It is rustic French baking at its best — simple ingredients treated with enough care that they don’t need much hiding them.

And beside a hot cup of coffee?

That may be our favorite kind of fall breakfast.

Pumpkin Cream Cheese Muffin

Pumpkin season has officially entered the Tulla pastry case.

Our Pumpkin Cream Cheese Muffin brings together two textures that were made for each other: a soft, tender pumpkin muffin and rich cream cheese.

The pumpkin gives the muffin its deep autumn flavor and wonderfully moist crumb, while the cream cheese adds a cool, creamy richness that keeps each bite balanced.

It is comforting without being overly heavy and indulgent without simply tasting sweet.

This is the kind of pastry that makes you want to pull it apart slowly rather than rush through it — a little pumpkin, a little cream cheese and a sip of coffee in between.

If your idea of fall involves pumpkin and a warm morning drink, consider this your weekend assignment.

Apple Crumb Danish

Now imagine taking everything wonderful about a classic French Danish and giving it the personality of a homemade apple crumble.

That’s our Apple Crumb Danish.

At the bottom are layers of buttery laminated pastry — the delicate, flaky structure that takes patience, careful folding and time to create properly.

Then come the apples.

And finally, the crumb.

That combination is what makes this one so difficult to put down. You get the light crispness of the pastry, the softness of the apple and that buttery crumb topping breaking apart with every bite.

It manages to be flaky, soft, crisp and tender all at once.

And because we make our pastries from scratch, this isn’t about disguising ingredients under mountains of sugar. It is about allowing butter, fruit and properly made pastry dough to do what good ingredients are supposed to do.

Sometimes the simplest combinations are the ones you remember.

Chocolate Cream Tarts

And then there is chocolate.

For anyone who has made it this far wondering when we were going to stop talking about apples and pumpkin, these are for you.

Our Chocolate Cream Tarts are the decadent counterpoint to the rest of this weekend’s fall lineup.

A crisp tart shell gives way to a smooth, rich chocolate cream filling, creating that classic contrast every good tart needs: a pastry that breaks gently beneath your fork followed immediately by silky chocolate.

Chocolate desserts can sometimes become overwhelmingly sweet.

A good chocolate tart is different.

It should taste first and foremost like chocolate — deep, creamy and luxurious — with the pastry providing just enough buttery crunch to balance every bite.

Small enough to feel elegant.

Rich enough to make you eat it very slowly.

And dangerous enough that you may regret buying only one.

Why Scratch-Made Still Matters

There are easier ways to run a bakery.

We just don’t think they taste as good.

Tulla was created around the vision of a French-inspired neighborhood bakery, and today we remain committed to that original idea.

Our pastries, breads and viennoiseries are handmade from scratch using fresh ingredients and baked in-house. We continue using the recipes and techniques that helped establish Tulla, with an experienced team of bakers and pastry professionals carrying that craft forward every day.

That means laminated dough takes time.

Fruit gets handled by real people.

Pastries are shaped by hand.

Batches are baked fresh.

And our weekend specials give our pastry team a chance to take those traditional skills and have a little fun with the season.

This weekend that means apples.

Pumpkin.

Cream cheese.

Chocolate.

Butter.

And four very good reasons to make a trip to Tulla.

Make It a Tulla Morning

Come early, choose your favorite from the pastry case and stay awhile.

Pair an Apple Galette or Pumpkin Cream Cheese Muffin with your morning coffee. Split an Apple Crumb Danish at the table — or very reasonably decide not to share it at all. Take a Chocolate Cream Tart home for later and spend the rest of the drive wondering whether “later” really needs to mean later.

Our weekend specials are made in limited quantities, and when a favorite disappears from the pastry case, that’s it for the day.

So if one of these has been calling your name while you were reading this, we’d recommend listening.
